today:  Meat Free Mondays: Summer Couscous with Halloumi

 A lazy supper for a lazy summer’s day!  

 

    Ingredients:
100g / 3 ½ oz / ½ cup cherry tomatoes, halved
1 small aubergine, sliced and then quartered
1 yellow pepper, deseeded and roughly diced
1 red onion, cut into thin wedges
1 garlic clove, crushed
2 tbsp olive oil
300ml / ½ pt / 1 ¼ cup vegetable stock (vegetable stock / bouillon cube crumbled into 300ml boiling water)
100g / 3 ½ oz / ½ cup couscous
2 tbsp tomato purée
1 tbsp harissa paste
45g / 1 ½ oz / ½ cup halloumi, thinly sliced
12g / ½ oz / ¼ cup pumpkin seeds

 

(1) Preheat the oven to 230˚C / 450˚F / Gas Mark 8. Put the cherry tomatoes, aubergine, pepper, onion and garlic onto a large roasting tray. Drizzle the oil over the top and toss to coat. Roast for 20 mins, or until the vegetables soften. (2) Meanwhile, pour the vegetable stock over the couscous. Leave to soak under a silver foil cover for 10 mins. Then fluff up with a fork. (3) Stir the tomato purée and harissa paste through the couscous. Combine well and then pop into the oven next to the vegetables to warm through for 5 mins, while the latter finish roasting. Then remove the vegetables and couscous, set aside and preheat the grill. (4) Brush the cheese slices with a little oil and grill for 2 mins each side, or until golden brown. (5) Toss the pumpkin seeds, vegetables and couscous together in a bowl. Stir well to combine. Divide the summer couscous between two plates and top with a couple of halloumi slices.

    Love this idea – thanks Cupcake. I know American recipes use ‘cups’ as a measure – please can someone translate into grams/ounces for me please.
